INGREDIENTS:
- 1 medium zucchini, diced
- 2 ¼ tsp. coconut oil
- 8 large egg whites
- 1 ¼ cups apples, diced
- 1 tsp. vanilla extract
- 1 cup Stoked Oats Run of the Mill Rolled Oats (ground into oat flour)
- 1 cup salted caramel whey protein
- ½ tsp. baking powder
- ½ tsp. baking soda
- 1 tsp. cinnamon
- ½ tsp. nutmeg
Crumble topping:
- ¼ cup Mountain Maple Oats
- ¼ cup Stoked Oats Run of the Mill Rolled Oats
- ½ tsp. cinnamon
- 1 ½ tsp. maple syrup
- 1 ¼ tsp. coconut sugar
PREPARATION:
1. Preheat oven to 325°F.
2. Blend zucchini, oil, egg whites, apple and vanilla.
3. In a large bowl, combine all dry ingredients.
4. Add dry to wet and mix thoroughly.
5. In a separate bowl, mix all topping ingredients
6. Pour mixture into a greased or lined bread tin.
7. Add crumble topping.
8. Bake for 60 minutes.
9. Remove, let loaf cool and enjoy.
